Instructions
- Prepare the vegetables by peeling and dicing your potatoes. Chop the onion, bell pepper, and mince the garlic.
- Sauté the aromatics in a skillet with olive oil until tender (optional).
- Combine the diced potatoes, sautéed vegetables, and corn in the slow cooker. Sprinkle in Cajun seasoning and pour the broth over everything.
- Cook on low for 6-8 hours or high for 4 hours.
- Finish with cream or milk about 30 minutes before serving.
