Instructions

  1. Prepare the vegetables by peeling and dicing your potatoes. Chop the onion, bell pepper, and mince the garlic.
  2. Sauté the aromatics in a skillet with olive oil until tender (optional).
  3. Combine the diced potatoes, sautéed vegetables, and corn in the slow cooker. Sprinkle in Cajun seasoning and pour the broth over everything.
