- 2 lbs Beef (chuck roast or flank steak)
- 2–3 Chipotle peppers in adobo sauce
- 4 cloves Garlic, minced
- 1 Onion, chopped
- 1 can Black beans, drained and rinsed
- 1 cup Corn, frozen or canned
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Oregano
- 1 cup Beef broth
- 2 cups Rice or quinoa
- Fresh cilantro, for garnishing
- 1 Avocado, sliced
- Lime wedges, for serving
Instructions
- Start by searing the beef in a hot skillet to develop a nice crust (optional).
- Combine the seared beef, chopped onions, minced garlic, diced chipotle peppers, black beans, corn, and spices in the slow cooker.
- Pour in beef broth just enough to cover the bottom of the slow cooker.
- Cover and cook on low for 480 minutes or on high for 240 minutes.
- Prepare rice or quinoa about 30 minutes before the beef is finished cooking.
- Shred the beef in the slow cooker with two forks, mixing it with the sauce.
- Assemble your bowls, starting with rice or quinoa, topped with the beef mixture and desired toppings.
Notes
For substitutions, use shredded chicken or plant-based proteins like jackfruit for a vegetarian option.
