Ingredients

  • 2 lbs Beef (chuck roast or flank steak)
  • 23 Chipotle peppers in adobo sauce
  • 4 cloves Garlic, minced
  • 1 Onion, chopped
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn, frozen or canned
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • 1 tsp Oregano
  • 1 cup Beef broth
  • 2 cups Rice or quinoa
  • Fresh cilantro, for garnishing
  • 1 Avocado, sliced
  • Lime wedges, for serving

Instructions

  1. Start by searing the beef in a hot skillet to develop a nice crust (optional).
  2. Combine the seared beef, chopped onions, minced garlic, diced chipotle peppers, black beans, corn, and spices in the slow cooker.
  3. Pour in beef broth just enough to cover the bottom of the slow cooker.
  4. Cover and cook on low for 480 minutes or on high for 240 minutes.
  5. Prepare rice or quinoa about 30 minutes before the beef is finished cooking.
  6. Shred the beef in the slow cooker with two forks, mixing it with the sauce.
  7. Assemble your bowls, starting with rice or quinoa, topped with the beef mixture and desired toppings.

Notes

For substitutions, use shredded chicken or plant-based proteins like jackfruit for a vegetarian option.
