- 4 boneless chicken thighs or breasts
- 2 cups chicken broth
- 1 cup long-grain white rice
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 cup carrots, chopped
- 1 cup peas
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prep your ingredients by chopping herbs and vegetables, and zesting the lemon.
- Layer the chicken in the slow cooker, pour in the broth, followed by rice, garlic, and lemon zest. Add carrots and peas around the chicken.
- Season with salt, pepper, thyme, and rosemary. Squeeze half the lemon juice over the ingredients and reserve the other half.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and rice absorbs the broth.
- Check for doneness 30 minutes before serving, ensuring the chicken shreds easily.
- Finish by stirring in the remaining lemon juice and fresh parsley just before serving.
Notes
For a vegetarian option, substitute chicken with tofu and use vegetable broth.
