Ingredients

  • 4 boneless chicken thighs or breasts
  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 cup carrots, chopped
  • 1 cup peas
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep your ingredients by chopping herbs and vegetables, and zesting the lemon.
  2. Layer the chicken in the slow cooker, pour in the broth, followed by rice, garlic, and lemon zest. Add carrots and peas around the chicken.
  3. Season with salt, pepper, thyme, and rosemary. Squeeze half the lemon juice over the ingredients and reserve the other half.
  4. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and rice absorbs the broth.
  5. Check for doneness 30 minutes before serving, ensuring the chicken shreds easily.
  6. Finish by stirring in the remaining lemon juice and fresh parsley just before serving.

Notes

For a vegetarian option, substitute chicken with tofu and use vegetable broth.
