  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup fresh dill (or 1 tbsp dried dill)
  • 8 oz spreadable cream cheese
  • 1/4 cup capers
  • 1 lemon, cut into wedges

Instructions

  1. Prepare the blini batter: In a bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the eggs and then mix in milk until smooth. Combine the wet and dry ingredients, stirring until just incorporated. Let this sit for about 20 minutes.
  2. Cook the blinis: Heat a skillet on medium heat and lightly grease with butter. Pour a tablespoon of batter into the skillet for each blini. Cook for about 2-3 minutes on each side or until golden brown. Remove and let cool on a wire rack. Repeat this process until the batter is finished.
  3. Assemble the cake: Start with a layer of blinis, then spread a generous amount of cream cheese on top, followed by slices of smoked salmon, a sprinkle of fresh dill, and a few capers. Repeat until you reach the desired height.
  4. Chill and serve: Cover the cake and refrigerate for at least an hour to let the flavors meld together beautifully. Just before serving, garnish with lemon wedges and extra dill.

Notes

Slice the cake with a sharp knife, wiping it clean between cuts for beautiful layers. Garnish each slice with a little extra dill or a caper for a pop of color.
