  • 2 bay leaves

Instructions

  1. Prepare the chicken: Season the chicken thighs generously with salt and pepper.
  2. Sear the chicken: In a large cast-iron skillet, heat oil over medium-high heat. Once hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and brown the other side, then remove from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, add a bit more oil if needed, then toss in the chopped onions and cook until softened. Stir in the minced garlic and mushrooms, allowing them to get tender and fragrant.
  4. Create the roux: Sprinkle flour over the mixture, stirring continuously until fully absorbed and cooked for about a minute.
  5. Add liquid: Gradually whisk in chicken broth and milk or cream, ensuring no lumps form. Scrape any bits from the bottom of the skillet to deglaze the pan and bring to a gentle simmer.
  6. Simmer the chicken: Return the chicken to the skillet, add thyme and bay leaves, cover, and reduce to low heat. Simmer for about 25-30 minutes until the chicken is cooked through and tender.
  7. Final adjustments: Remove bay leaves, taste the gravy, and adjust seasoning as needed.
  8. Serve it right: Spoon the gravy over rice or mashed potatoes and garnish with chopped parsley.
