- 4 cups bread flour
- 1 cup rolled oats
- 1 cup active sourdough starter
- 1/4 cup honey
- 1 1/2 cups filtered water
- 2 tsp fine sea salt
- Optional: extra oats for topping
Instructions
- Combine starter and flour: In a large mixing bowl, combine your active sourdough starter with the bread flour and oats. Mix until well combined.
- Add honey and water: Gently warm your water and stir in the honey until dissolved. Pour this mixture into your dry ingredients.
- Knead the dough: Turn this mixture out onto a lightly floured surface and knead by hand for about 8-10 minutes, until it’s smooth and elastic.
- First rise: Shape the dough into a ball and place it in a lightly greased bowl, covering it with a damp cloth. Let it rise in a warm spot until doubled in size, about 240-360 minutes.
- Shape the loaf: Once the dough has risen, gently deflate it and shape it into a loaf. Place it in a prepared loaf pan or on a baking stone.
- Second rise: Cover it again and let it rise for another 120-180 minutes, or until it has puffed up significantly.
- Preheat the oven: About 30 minutes before baking, preheat your oven to 450°F (232°C).
- Bake the bread: Just before placing the bread in, carefully add a cup of hot water to the baking tray to create steam. Bake for 30-35 minutes or until golden brown.
- Cool: Let the bread cool on a wire rack for at least 30 minutes before slicing.
