Ingredients

  • 4 cups bread flour
  • 1 cup rolled oats
  • 1 cup active sourdough starter
  • 1/4 cup honey
  • 1 1/2 cups filtered water
  • 2 tsp fine sea salt
  • Optional: extra oats for topping

Instructions

  1. Combine starter and flour: In a large mixing bowl, combine your active sourdough starter with the bread flour and oats. Mix until well combined.
  2. Add honey and water: Gently warm your water and stir in the honey until dissolved. Pour this mixture into your dry ingredients.
  3. Knead the dough: Turn this mixture out onto a lightly floured surface and knead by hand for about 8-10 minutes, until it’s smooth and elastic.
  4. First rise: Shape the dough into a ball and place it in a lightly greased bowl, covering it with a damp cloth. Let it rise in a warm spot until doubled in size, about 240-360 minutes.
  5. Shape the loaf: Once the dough has risen, gently deflate it and shape it into a loaf. Place it in a prepared loaf pan or on a baking stone.
  6. Second rise: Cover it again and let it rise for another 120-180 minutes, or until it has puffed up significantly.
  7. Preheat the oven: About 30 minutes before baking, preheat your oven to 450°F (232°C).
  8. Bake the bread: Just before placing the bread in, carefully add a cup of hot water to the baking tray to create steam. Bake for 30-35 minutes or until golden brown.
  9. Cool: Let the bread cool on a wire rack for at least 30 minutes before slicing.
