- 500 grams bread flour
- 300 grams filtered water
- 100 grams active sourdough starter
- 30 grams honey
- 50 grams rolled oats
- 10 grams sea salt
Instructions
- Activate your sourdough starter by feeding it a few hours before starting.
- Mix in a large bowl: bread flour, water, sourdough starter, honey, rolled oats, and salt until a shaggy dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Let it rise in a greased container covered with a damp cloth for 4–6 hours or until doubled in size.
- Shape the dough into a round or oval loaf on a floured surface.
- Proof the shaped loaf in a proving basket or floured bowl for 2–3 hours.
- Preheat the oven to 450°F (232°C) with a Dutch oven inside for 30 minutes.
- Transfer the dough onto parchment, score the top, and bake in the Dutch oven covered for 30 minutes.
- Remove the lid and bake for an additional 15–20 minutes until golden brown.
- Cool on a wire rack before slicing.
