Ingredients

  • 500 grams bread flour
  • 300 grams filtered water
  • 100 grams active sourdough starter
  • 30 grams honey
  • 50 grams rolled oats
  • 10 grams sea salt

Instructions

  1. Activate your sourdough starter by feeding it a few hours before starting.
  2. Mix in a large bowl: bread flour, water, sourdough starter, honey, rolled oats, and salt until a shaggy dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Let it rise in a greased container covered with a damp cloth for 4–6 hours or until doubled in size.
  5. Shape the dough into a round or oval loaf on a floured surface.
  6. Proof the shaped loaf in a proving basket or floured bowl for 2–3 hours.
  7. Preheat the oven to 450°F (232°C) with a Dutch oven inside for 30 minutes.
  8. Transfer the dough onto parchment, score the top, and bake in the Dutch oven covered for 30 minutes.
  9. Remove the lid and bake for an additional 15–20 minutes until golden brown.
  10. Cool on a wire rack before slicing.
