- 1 bunch collard greens, chopped
- 3–4 Yukon Gold or Russet potatoes, peeled and cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 tablespoon olive oil or butter
- 1 teaspoon fresh thyme
- 2 bay leaves
- Salt and black pepper, to taste
Instructions
- Prep the ingredients: Wash the collard greens thoroughly. Remove the tough stems and chop them into bite-sized pieces. Dice the onion and mince the garlic. Peel and cube the potatoes.
- Sauté the aromatics: In a large pot, heat a tablespoon of olive oil or butter over medium heat. Add the onion and sauté until translucent, about five minutes. Add minced garlic and cook for another minute until fragrant.
- Add the collards: Toss in the collard greens and sauté them for around 5-7 minutes until they start to reduce.
- Incorporate the potatoes and broth: Add the cubed potatoes to the pot along with your broth, thyme, bay leaves, salt, and pepper. Bring to a gentle boil, then reduce heat to low and simmer.
- Simmer until tender: Allow the stew to simmer for about 25-30 minutes, or until the potatoes are tender and the collards are beautifully soft.
- Taste and adjust: Check for seasoning and add more salt or pepper as needed. Add hot sauce if desired.
- Serve with love: Ladle the stew into bowls and serve warm with crusty cornbread or rice.
Notes
For a thicker stew, mash a few potatoes against the side of the pot while stirring. Patience is key for enhancing flavors, especially the collards.
