  • 34 Yukon Gold or Russet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil or butter
  • 1 teaspoon fresh thyme
  • 2 bay leaves
  • Salt and black pepper, to taste

Instructions

  1. Prep the ingredients: Wash the collard greens thoroughly. Remove the tough stems and chop them into bite-sized pieces. Dice the onion and mince the garlic. Peel and cube the potatoes.
  2. Sauté the aromatics: In a large pot, heat a tablespoon of olive oil or butter over medium heat. Add the onion and sauté until translucent, about five minutes. Add minced garlic and cook for another minute until fragrant.
  3. Add the collards: Toss in the collard greens and sauté them for around 5-7 minutes until they start to reduce.
  4. Incorporate the potatoes and broth: Add the cubed potatoes to the pot along with your broth, thyme, bay leaves, salt, and pepper. Bring to a gentle boil, then reduce heat to low and simmer.
  5. Simmer until tender: Allow the stew to simmer for about 25-30 minutes, or until the potatoes are tender and the collards are beautifully soft.
  6. Taste and adjust: Check for seasoning and add more salt or pepper as needed. Add hot sauce if desired.
  7. Serve with love: Ladle the stew into bowls and serve warm with crusty cornbread or rice.

Notes

For a thicker stew, mash a few potatoes against the side of the pot while stirring. Patience is key for enhancing flavors, especially the collards.
