Ingredients

  • ½ cup sugar (plus extra for sweetness)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 1 tablespoon lemon juice
  • Optional: Cinnamon or nutmeg for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix blueberries with ½ cup of sugar and lemon juice. Let sit for 15-20 minutes.
  3. In a separate bowl, combine flour, 1 cup sugar, baking powder, and salt. Mix well. Stir in milk and melted butter until just combined.
  4. Pour the batter into a greased 9×13 inch baking dish and distribute the blueberry mixture over the batter without stirring.
  5. Bake for 40-45 minutes or until the top is golden brown and blueberries are bubbly.
  6. Let cool slightly before serving.
  7. Serve with vanilla ice cream if desired.

Notes

For a twist, add peaches or blackberries. Store leftovers in the refrigerator for up to three days or freeze for up to three months.
