Description

Ingredients

  • 4 large eggs
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 2 tablespoons mirin or vinegar
  • Optional: garlic, ginger, or scallions

Instructions

  1. Boil the eggs in a pot filled with cold water until gently boiling.
  2. Cook for 6-7 minutes for soft-boiled, or longer for firmer yolks.
  3. Prepare an ice bath to immediately cool the eggs.
  4. Peel the cooled eggs and set aside.
  5. Mix soy sauce, water, and mirin in a bowl. Add optional aromatics if desired.
  6. Submerge the peeled eggs in the marinade and let soak for at least 30 minutes.
  7. Serve by slicing the eggs in half and garnish with sesame seeds or green onions.

Notes

For the best flavor, allow eggs to soak longer or overnight. Consider variations with sriracha for a spicy twist.
