Description

A hearty and flavorful stew combining chickpeas and chorizo with aromatic spices for a comforting meal.


Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 8 oz chorizo, sliced or crumbled
  • 1 can (15 oz) crushed tomatoes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1 cup carrots, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 34 cups vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onions and sauté for 5 minutes until translucent.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Add chorizo to the pot, cooking until browned (5-7 minutes).
  4. Stir in bell peppers and carrots, cooking until softened (3-4 minutes).
  5. Pour in crushed tomatoes and add chickpeas; season with paprika, cumin, salt, and pepper.
  6. Pour in vegetable broth until the mixture is submerged. Bring to a gentle boil, then reduce heat and simmer for 30-40 minutes.
  7. Taste and adjust seasoning. Serve hot, garnished with fresh parsley or cilantro.

Notes

For depth of flavor, refrigerate overnight and reheat before serving. Serve with crusty bread or over rice.
