Instructions
- Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand before pressing it firmly into the bottom of a lined 9×9 inch baking dish. Chill in the refrigerator while you make the cheesecake filling.
- Make the Cheesecake Filling: Beat cream cheese and sugar together until smooth and fluffy. Gradually add sparkling champagne and mix until well combined. Fold in sliced strawberries gently.
- Assemble and Bake: Pour the cheesecake mixture over the chilled crust, smoothing it into an even layer. Bake in a preheated oven at 325°F (160°C) for about 30 minutes.
- Chill: Allow it to cool at room temperature before refrigerating for 4 hours or until fully set.
