- 1 cup granulated sugar
- 1 cup whipped cream
- 1 cup fresh strawberries, sliced
- ½ cup sparkling wine or champagne
- 1 cup crushed graham crackers
- ⅓ cup melted butter
- 1 tablespoon sugar (for the crust)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine crushed graham crackers, melted butter, and sugar in a medium bowl and mix until soaked.
- Press the mixture into the bottom of an 8×8-inch baking pan.
- Bake for about 8 minutes until golden, then let cool.
- Beat the softened cream cheese in a mixing bowl until smooth.
- Add the granulated sugar gradually, mixing well.
- Fold in the whipped cream until light and fluffy.
- Combine sliced strawberries and sparkling wine in another bowl.
- Gently fold the strawberry mixture into the cream cheese mixture until evenly distributed.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Refrigerate for at least 4 hours, preferably overnight, to set.
- Garnish with additional sliced strawberries and drizzle with champagne before serving.
Notes
Allow the cheesecake bars to set overnight for the best texture and flavor. You can substitute raspberries or sliced peaches for strawberries if needed.
