  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 inch Fresh Ginger, minced
  • 12 Green Chilies, chopped
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1 tsp Garam masala
  • 1 tsp Paprika
  • Salt to taste
  • 2 cups All-purpose flour
  • Water, as needed
  • Oil, for frying
  • 2 cups Mango, diced
  • 1/2 cup Sugar
  • 1/4 cup Vinegar
  • Pinch of Salt
  • 1 tsp Chili powder (optional)

Instructions

  1. Prepare the Filling: In a large skillet over medium heat, add a tablespoon of oil and sauté chopped onions until translucent. Incorporate minced garlic, ginger, and chilies, cooking for an additional minute until fragrant. Add the ground lamb, breaking it up with a spatula, followed by cumin, coriander, paprika, and garam masala. Cook until the lamb is browned and fully cooked. Taste for seasoning and adjust as needed. Let the mixture cool.
  2. Make the Dough: In a mixing bowl, combine all-purpose flour, a pinch of salt, and enough water to create a smooth, pliable dough. Cover it with a damp cloth and let it rest for about 30 minutes.
  3. Form the Samosas: Divide the dough into small balls and roll each ball into thin circles. Place about a tablespoon of the cooled lamb mixture in the center of each circle. Fold the dough over to form a half-moon shape, sealing the edges with water. Crimp the edges with your fingers for a secure seal.
  4. Fry the Samosas: In a deep pot or skillet, heat oil until hot. Carefully drop in the samosas, cooking until golden brown and crispy, about 3–4 minutes on each side. Drain on paper towels to remove excess oil.
  5. Make the Mango Chutney: In a small saucepan, combine diced mango, sugar, vinegar, and a pinch of salt. Cook over medium heat until the mango softens and the mixture thickens slightly. Add chili powder or fresh chopped chilies for heat if desired.

Notes

Ensure the filling cools before wrapping to prevent soggy pastries. Fry in batches for best results.
