  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil or sesame oil
  • Chopped cilantro or scallions for garnish

Instructions

  1. Prepare the Ingredients: Slice the chicken, finely chop the jalapeños, and slice bell peppers. Mince the garlic and ginger.
  2. Heat the Oil: In a skillet, heat about 2 tablespoons of oil over medium-high heat.
  3. Cook the Chicken: Add the chicken strips to the hot oil; stir-fry for 4-5 minutes until cooked through. Remove and set aside.
  4. Add Aromatics: In the same skillet, (add any more oil if necessary) toss in the minced garlic, ginger, and jalapeños; stir for about 30 seconds.
  5. Mix in the Veggies: Add sliced bell peppers and snap peas; stir-fry for 3-4 minutes until crisp yet tender.
  6. Combine the Chicken: Return the chicken to the skillet, pour in the soy sauce, and mix well before removing from heat.
  7. Garnish and Serve: Top with fresh herbs and serve with steamed rice or noodles.

Notes

For a milder taste, reduce the number of jalapeños or pair with a cooling side like creamy coleslaw.
