- 1 lb boneless chicken (breast or thighs), sliced
- 2–3 fresh jalapeños, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 bell pepper, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 2 tablespoons soy sauce
- 2 tablespoons olive oil or sesame oil
- Chopped cilantro or scallions for garnish
Instructions
- Prepare the Ingredients: Slice the chicken, finely chop the jalapeños, and slice bell peppers. Mince the garlic and ginger.
- Heat the Oil: In a skillet, heat about 2 tablespoons of oil over medium-high heat.
- Cook the Chicken: Add the chicken strips to the hot oil; stir-fry for 4-5 minutes until cooked through. Remove and set aside.
- Add Aromatics: In the same skillet, (add any more oil if necessary) toss in the minced garlic, ginger, and jalapeños; stir for about 30 seconds.
- Mix in the Veggies: Add sliced bell peppers and snap peas; stir-fry for 3-4 minutes until crisp yet tender.
- Combine the Chicken: Return the chicken to the skillet, pour in the soy sauce, and mix well before removing from heat.
- Garnish and Serve: Top with fresh herbs and serve with steamed rice or noodles.
Notes
For a milder taste, reduce the number of jalapeños or pair with a cooling side like creamy coleslaw.
