- Whisk the eggs: In a bowl, crack 2 to 3 large eggs. Add a pinch of salt and pepper, then whisk until everything is combined and airy.
- Sauté your spinach: In a non-stick skillet, heat a tablespoon of butter or olive oil over medium heat. Add the chopped onions (if using) and cook until they soften. Stir in the spinach and cook until it wilts, only about 1-2 minutes.
- Add the eggs: Pour the whisked eggs over the sautéed spinach, tilting the pan to ensure they spread evenly. Allow them to cook undisturbed for about 1-2 minutes until the edges start to set.
