  • 2 cups fresh spinach
  • 1 cup dried cranberries
  • 8 ounces cream cheese
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup shredded cheese (sharp cheddar or mozzarella)
  • Fresh thyme or parsley, for seasoning
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Preheat your oven to 375°F (190°C). Carefully slice into the side of each chicken breast to create a pocket.
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add minced garlic and onion, sautéing until fragrant, about 3-4 minutes.
  3. Toss in the fresh spinach and cook until wilted, roughly 2-3 minutes. Remove from heat and mix in the dried cranberries and cream cheese until well combined.
  4. Generously stuff each chicken breast with the spinach and cranberry mixture. Season liberally with salt, pepper, and herbs.
  5. Sear the chicken breasts in the skillet until golden, about 3-4 minutes per side. Transfer to the oven and bake for 20-25 minutes or until cooked through.
  6. Let the chicken rest for a few minutes before slicing. Serve warm and enjoy!
