Ingredients
Scale
- 1 lb steak (flank or ribeye)
- 2 ears fresh corn (or 1 can/frozen)
- 2 ripe avocados, diced
- 1/2 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1/2 cup sour cream or Greek yogurt
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Prepare the steak: Season with salt, pepper, cumin, and smoked paprika. Let sit for 20 minutes.
- Cook the steak: Heat a skillet and sear the steak for 4-5 minutes on each side for medium-rare. Let it rest before slicing.
- Roast the corn: In the same skillet, add corn and roast for 5-7 minutes until charred.
- Make the cilantro cream: Combine sour cream, cilantro, lime juice, garlic, salt, and pepper in a bowl until smooth.
- Assemble your bowl: Layer sliced steak, roasted corn, and diced avocado. Drizzle with cilantro cream.
- Garnish and enjoy: Add toppings like green onions or tomatoes if desired.
Notes
Allow steak to rest before slicing for maximum juiciness. Customize with additional toppings to enhance flavors.
