Deliciously rich cheesecake swirled with fresh strawberry puree, perfect for family gatherings and celebrations.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 1/4 cups cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 cup fresh strawberries, pureed
- Optional: 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (160°C). Combine the graham cracker crumbs with melted butter and a couple of tablespoons of sugar in a bowl. Press this mixture firmly into a springform pan to form a crust. Bake for 10 minutes and allow to cool slightly.
- In a large mixing bowl, beat the cream cheese until creamy. Gradually add sugar and mix until fluffy. Incorporate the sour cream, eggs, and vanilla extract, mixing until smooth.
- Puree fresh strawberries with sugar and a splash of lemon juice for added brightness.
- Pour half of the cheesecake filling over the cooled crust. Drizzle a few spoonfuls of strawberry puree and gently swirl with a knife. Pour in remaining filling and repeat with more strawberry puree.
- Bake for about 55-60 minutes until set but slightly jiggly in the center. Turn off the oven, crack the door, and let cool to prevent cracking.
- Refrigerate for at least 4 hours or overnight before serving.
- Serve with fresh strawberries and whipped cream.
Notes
For best results, use room temperature ingredients. Consider adding a pan of water to the oven while baking to help prevent cracks.
