Ingredients

  • 16 large button or cremini mushrooms
  • 8 oz (226 g) cream cheese, softened
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp fresh herbs (thyme, parsley, or dill)
  • 1/2 cup grated Parmesan or cheddar cheese
  • 1/2 cup breadcrumbs (panko recommended)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the mushrooms by cleaning and removing the stems; chop the stems finely.
  3. Sauté the onion and garlic in olive oil until softened (about 3-4 minutes).
  4. Mix the cream cheese, sautéed onions and garlic, chopped stems, herbs, cheese, salt, and pepper in a bowl.
  5. Stuff the mushroom caps with the filling generously.
  6. Top with breadcrumbs and drizzle with olive oil.
  7. Bake for 20-25 minutes until golden brown and mushrooms are tender.
  8. Let cool slightly before serving warm.
