  • 1 cup unsalted butter, cold and diced
  • 1/2 cup granulated sugar
  • 1 cup finely ground almonds
  • 1 large egg
  • 1 teaspoon almond extract
  • Powdered sugar for dusting

Instructions

  1. Prepare the dough: In a large mixing bowl, combine all-purpose flour, sugar, and cold, diced unsalted butter. Use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.
  2. Add wet ingredients: Beat one egg and stir it in along with a splash of almond extract. Combine until just incorporated; do not overmix.
  3. Chill: Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.
  4. Make the almond filling: In another bowl, mix finely ground almonds, sugar, and the remaining egg until well combined. Adjust sweetness to taste.
  5. Roll out the dough: On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut into squares or circles.
  6. Fill and shape: Place a spoonful of the almond filling in the center of each piece of dough. Fold over to seal and crimp edges with a fork.
  7. Bake: Preheat oven to 350°F (175°C) and bake for 20-25 minutes, or until golden brown.
  8. Cool and serve: Allow to cool slightly before dusting with powdered sugar.

Notes

Use cold butter for flakiness and chill the dough for easier handling. Don’t rush the process.
