  • 2 tbsp Lime juice

  • 12 Thai chilies, chopped (or chili paste)
  • 1 cup Bell peppers, chopped (red, yellow, green)
  • 1/4 cup Fresh basil or cilantro
  • Cooked Rice, for serving

Instructions

  1. Marinate the chicken: In a bowl, whisk together honey, soy sauce, lime juice, minced garlic, and grated ginger. Add the chicken pieces and coat them well. Let them marinate for at least 30 minutes.
  2. Prepare your veggies: While the chicken marinates, chop your bell peppers and any other vegetables you wish to incorporate.
  3. Heat your skillet: In a large skillet or wok, heat a drizzle of oil over medium-high heat.
  4. Cook the chicken: Once hot, add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes on each side until the chicken is golden brown and cooked through.
