- 1 lb Chicken thighs
- 1/4 cup Soy sauce
- 1/4 cup Honey
- 2 tbsp Lime juice
- 3 cloves Garlic, minced
- 1 tbsp Ginger, grated
- 1–2 Thai chilies, chopped (or chili paste)
- 1 cup Bell peppers, chopped (red, yellow, green)
- 1/4 cup Fresh basil or cilantro
- Cooked Rice, for serving
Instructions
- Marinate the chicken: In a bowl, whisk together honey, soy sauce, lime juice, minced garlic, and grated ginger. Add the chicken pieces and coat them well. Let them marinate for at least 30 minutes.
- Prepare your veggies: While the chicken marinates, chop your bell peppers and any other vegetables you wish to incorporate.
- Heat your skillet: In a large skillet or wok, heat a drizzle of oil over medium-high heat.
- Cook the chicken: Once hot, add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes on each side until the chicken is golden brown and cooked through.
- Add veggies: Toss in your chopped bell peppers and any other veggies at the halfway cooking point. Stir-fry everything together for an additional 3-4 minutes, or until the veggies are tender-crisp.
