Instructions
- In a large mixing bowl, beat together the butter, granulated sugar, and powdered sugar until light and fluffy.
- Stir in the vanilla extract.
- In another bowl, whisk together the flour and salt. Gradually add to the butter mixture, mixing until just combined.
- Fold in the chocolate chips and toffee bits gently until evenly distributed.
- Divide the dough in half, shape into logs, and wrap in plastic. Refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). Slice chilled dough into ¼-inch thick cookies and place them on a lined baking sheet.
- Bake for 12-15 minutes until edges are golden. Cool on a wire rack.
Notes
For variations, consider using brown sugar instead of granulated sugar for a richer flavor, or substitute coconut oil for a dairy-free version.
