  • 4 cups beef or vegetable broth

  • Shredded cheese, for serving
  • Sour cream, for serving
  • Avocado, for serving

Instructions

  1. Sauté the aromatics: Heat a splash of olive oil in a large pot over medium heat. Add chopped onions, garlic, and diced bell peppers, sautéing until tender and fragrant—about 5 minutes.
  2. Brown the meat: Add your choice of ground meat to the pot. Cook, stirring occasionally, until browned, about 7-10 minutes.
  3. Incorporate the vegetables and spices: Stir in canned diced tomatoes, soaked beans, corn, and all the spices. Give everything a good stir to combine.
