  • 1 can coconut milk
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 stalk lemongrass (optional), chopped
  • 4 cups vegetable broth (or chicken broth)
  • 1 cup carrots, diced
  • 1 cup bell peppers, diced
  • 1 cup mushrooms, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup Thai basil, chopped
  • 1 lime, juiced
  • 12 fresh chili peppers, to taste
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by rinsing the red lentils under cold water until the water runs clear. Chop your carrots, bell peppers, and any other vegetables you wish to include.
  2. Sauté the aromatics by adding vegetable oil to a large pot over medium heat. Add minced garlic and grated ginger, and sauté until fragrant, about 1 minute.
  3. Add the chopped vegetables and rinsed lentils to the pot. Stir everything together for about an additional minute.
  4. Pour in the coconut milk and vegetable broth, bringing the mixture to a gentle simmer while stirring occasionally.
  5. Simmer the soup for about 20-25 minutes, or until the lentils and vegetables are tender, stirring frequently.
  6. Season and adjust flavor by adding salt, pepper, and lime juice. You can also adjust the level of heat with fresh chili or chili paste at this stage.
  7. Finish by stirring in fresh cilantro or Thai basil just before serving for an extra burst of flavor.

Notes

This soup can be stored in the refrigerator for up to 4-5 days or frozen for later use. Reheat gently before serving.
