- 1 cup red lentils
- 1 can coconut milk
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 stalk lemongrass (optional), chopped
- 4 cups vegetable broth (or chicken broth)
- 1 cup carrots, diced
- 1 cup bell peppers, diced
- 1 cup mushrooms, sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup Thai basil, chopped
- 1 lime, juiced
- 1–2 fresh chili peppers, to taste
- Salt and pepper to taste
Instructions
- Prepare your ingredients by rinsing the red lentils under cold water until the water runs clear. Chop your carrots, bell peppers, and any other vegetables you wish to include.
- Sauté the aromatics by adding vegetable oil to a large pot over medium heat. Add minced garlic and grated ginger, and sauté until fragrant, about 1 minute.
- Add the chopped vegetables and rinsed lentils to the pot. Stir everything together for about an additional minute.
- Pour in the coconut milk and vegetable broth, bringing the mixture to a gentle simmer while stirring occasionally.
- Simmer the soup for about 20-25 minutes, or until the lentils and vegetables are tender, stirring frequently.
- Season and adjust flavor by adding salt, pepper, and lime juice. You can also adjust the level of heat with fresh chili or chili paste at this stage.
- Finish by stirring in fresh cilantro or Thai basil just before serving for an extra burst of flavor.
Notes
This soup can be stored in the refrigerator for up to 4-5 days or frozen for later use. Reheat gently before serving.
