  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce (or vegan alternative)
  • 2 scallions, chopped
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Cook the rice according to package instructions. Ideally, use day-old rice for best results.
  2. Heat oil in a large skillet or wok over medium-high heat. Add minced garlic and onions, stir-frying until fragrant.
  3. Add the chopped bell peppers and carrots, sautéing for 2-3 minutes until tender.
  4. Incorporate the cooked rice, breaking up clumps and mixing well.
  5. Mix in the pineapple, soy sauce, and fish sauce, stirring to combine.
  6. Add eggs to the center of the mixture, scramble until cooked, then mix them in.
  7. Finish with chopped scallions and cilantro, and squeeze lime juice over the dish.
  8. Serve garnished with more cilantro and lime wedges.
