Instructions
- Cook the rice according to package instructions. Ideally, use day-old rice for best results.
- Heat oil in a large skillet or wok over medium-high heat. Add minced garlic and onions, stir-frying until fragrant.
- Add the chopped bell peppers and carrots, sautéing for 2-3 minutes until tender.
- Incorporate the cooked rice, breaking up clumps and mixing well.
- Mix in the pineapple, soy sauce, and fish sauce, stirring to combine.
- Add eggs to the center of the mixture, scramble until cooked, then mix them in.
