Description

A delightful combination of rich cake layered with creamy pumpkin and pecan pies, perfect for holiday celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 1 cup unsalted butter, softened
  • 1 tablespoon baking powder
  • 1 cup milk or buttermilk
  • 1 cup pumpkin puree
  • 1 cup pecan pie filling
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two round cake pans.
  3. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  4. In another bowl, mix the butter with the eggs and milk until well blended.
  5. Gradually add the wet ingredients to the dry mixture and stir until just combined.
  6. Pour the batter evenly into the prepared pans and bake for about 25-30 minutes or until a toothpick comes out clean. Let them cool completely.
  7. In a saucepan, combine sugar, corn syrup, and butter over medium heat, stirring until melted. Remove from heat and stir in the eggs. Add in chopped pecans and vanilla extract.
  8. In a mixing bowl, blend together pumpkin puree, sugar, spices, and eggs until smooth.
  9. Place one layer of cake on a cake stand, pour in the pecan filling, followed by another layer of cake, and then repeat with the pumpkin filling.
  10. Top with the final cake layer.
  11. You can use whipped cream or cream cheese frosting to top off your Piecaken, garnishing it with crushed pecans and a dusting of cinnamon for that finishing touch.
