- 8 oz Cream cheese, softened
- 1/2 cup Unsalted butter, softened
- 1 cup Granulated sugar
- 1/2 cup Brown sugar
- 2 tbsp Espresso powder or strong brewed coffee
- 1 tsp Vanilla extract
- 2 cups All-purpose flour
- 1 tsp Baking soda
- 2 tbsp Cocoa powder
- 1/2 tsp Salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened cream cheese and unsalted butter until smooth and fluffy.
- Gradually mix in the granulated and brown sugars until incorporated.
- Add the espresso powder and vanilla extract to the mixture and mix until shiny.
- Whisk together flour, baking soda, cocoa powder, and salt in a separate bowl.
- Slowly add the dry ingredients to the creamed mixture and stir until just combined.
- Chill the dough for about 30 minutes for optimal flavor (optional).
- Scoop the dough onto the prepared baking sheet and bake for about 10-12 minutes.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely before dusting with cocoa powder.
Notes
For a lighter version, substitute Greek yogurt for cream cheese. Store in an airtight container for up to a week.
