- 2 cans Tuna (in olive oil or water)
- 2 cups Tomatoes (canned diced or fresh)
- 1 medium Yellow Onion (diced)
- 3 cloves Garlic (minced)
- 1/4 cup Olive Oil
- 1/4 cup Fresh Basil (chopped)
- 1/4 cup Fresh Parsley (chopped)
- 1/4 cup Parmesan Cheese (grated, plus more for serving)
- Zest of 1 Lemon
Instructions
- Cook the Pasta: Boil a large pot of salted water, add pasta, and cook until al dente. Reserve some pasta water.
- Sauté the Aromatics: Heat olive oil over medium heat. Add onion and salt, sauté until soft (about 5 minutes), then add garlic and cook for 1-2 minutes.
- Add the Tomatoes: Stir in canned or fresh tomatoes and simmer for about 10 minutes.
- Incorporate the Tuna: Gently fold in the drained tuna and heat through for 2-3 minutes.
- Combine with Pasta: Drain the pasta and toss it into the sauce, adding reserved pasta water if necessary.
- Finish with Freshness: Stir in basil, parsley, lemon zest, and parmesan just before serving.
- Serve and Enjoy: Serve topped with extra parmesan and a drizzle of olive oil.
