Instructions
- Prep your kitchen: Preheat the oven to 350°F (175°C) and line two baking trays with parchment paper.
- Cream the butter and sugars: In a large bowl, beat together the room temperature butter, granulated sugar, and brown sugar until fluffy and light.
- Add the egg and vanilla: Crack the egg and drizzle in the vanilla, beating until well-combined.
- Combine dry ingredients: In another bowl, whisk together the flour and baking powder, then gradually add to the wet ingredients.
- Fold in the strawberries and chocolate: Gently fold them into the mixture.
- Scoop and bake: Drop dollops of dough onto the prepared trays and bake for 10-12 minutes.
- Cool and enjoy: Let them cool on trays for a few minutes before transferring to a wire rack.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Use ripe strawberries for the best flavor.
