- 1 onion, chopped
- 1-inch ginger, minced
- 1 tablespoon soy sauce or tamari
- 1 tablespoon sesame oil
- 1 cup tofu, cubed
- 2 green onions, sliced
- 1/4 cup cilantro, chopped
- Lime wedges (for serving)
Instructions
- Prepare the ingredients: Cook noodles according to package instructions. Drain and set aside.
- Heat a tablespoon of oil in a large skillet or wok over medium heat. Add minced garlic and chopped onions, stirring until fragrant (2-3 minutes).
- Toss in the tofu, cooking until golden and crispy.
- Add harder vegetables like carrots first and sauté for a few minutes before adding softer ones like cabbage.
- Combine the cooked noodles with the sautéed vegetables and pour in soy sauce and sesame oil. Toss gently for 2-3 minutes.
- Finish with sliced green onions and chopped cilantro; squeeze lime before serving.
