- 1 cup Ube (Purple Yam) or purple sweet potatoes
- 3 cups All-Purpose Flour (or gluten-free flour blend)
- 1 cup Plant-Based Milk (Almond or Coconut)
- 2 teaspoons Active Dry Yeast
- 1/4 cup Sugar (or coconut sugar)
- 1 teaspoon Salt
- 1/4 cup Vegan Butter or Coconut Oil (or applesauce for oil-free)
- 1 teaspoon Cinnamon (optional)
Instructions
- Prepare the dough: In a mixing bowl, combine warm plant-based milk and sugar. Stir in active dry yeast and let it bloom for about 5–10 minutes until frothy. In another bowl, whisk together flour and salt. Gradually add the yeast mixture and melted vegan butter to the flour. Mix until a cohesive dough forms.
- Knead the dough: Transfer the dough to a lightly floured surface and knead for about 5–10 minutes, or until it’s soft and elastic. Place it in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm spot until it doubles in size—typically about an hour.
- Prepare the filling: While the dough rises, prepare the ube filling. If using whole ube, steam it until tender, then mash it smoothly. Mix it with some vegan butter, a pinch of salt, and a sprinkle of cinnamon for flavor.
- Roll and fill: Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle. Spread the ube filling evenly over the surface. Starting from the long side, tightly roll the dough into a log. Slice it into equal rolls and arrange them in a greased baking dish, ensuring they are snug but not overcrowded.
- Final rise: Allow the rolls to rise again for about 30 minutes, covering them with a towel. Preheat your oven to 350°F (175°C) during this time.
- Bake: Bake the rolls for 25-30 minutes, or until lightly golden. If you wish, brush some melted vegan butter on top after baking for extra richness.
- Serve warm: Once out of the oven, allow them to cool slightly before serving.
