- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1 egg
- 1/2 cup molasses
- 2 cups powdered sugar (for icing)
- 2–4 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C). Prepare your baking sheets with parchment paper.
- Combine flour, ginger, cinnamon, cloves, and baking soda in a large mixing bowl.
- Cream together butter and brown sugar until light and fluffy.
- Beat in egg and molasses until well combined.
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto the baking sheets, spacing them 2 inches apart.
- Bake for 8-10 minutes, or until edges are set but centers are still soft.
- Cool on the baking sheets for 5 minutes before transferring to a wire rack.
- Mix powdered sugar with milk for icing, adjusting consistency as desired.
- Drizzle icing over cooled cookies and allow it to set before serving.
Notes
For a vegan option, substitute the egg with flaxseed meal and butter with coconut oil or vegan butter. Store in an airtight container for up to a week.
