- 4 boneless chicken breasts or thighs
- 4 tablespoons butter
- 4 cloves garlic, minced
- 8 ounces cremini or shiitake mushrooms, sliced
- 2 tablespoons fresh thyme or rosemary, chopped
- 1 cup vegetable or chicken broth
- Salt and pepper to taste
Instructions
- Prep the ingredients: Start by chopping the garlic and slicing the mushrooms. Season the chicken with salt, pepper, and any preferred herbs.
- Heat the skillet: In a large skillet, melt a couple of tablespoons of butter over medium heat.
- Sear the chicken: Add the chicken to the skillet, cooking until golden brown on one side; about 5-7 minutes. Flip and cook for another 5-7 minutes until fully cooked through. Remove the chicken and set it aside.
- Sauté the mushrooms: Add a bit more butter in the same skillet and toss in the mushrooms. Let them cook for about 4-5 minutes until they’re nice and caramelized. Stir in the garlic and cook for an additional minute.
- Bring it all together: Return the chicken to the skillet, add the broth, and let everything simmer for a few minutes.
- Finish with fresh herbs: Season with more salt, pepper, and finish with your chosen fresh herbs.
- Serve hot: Enjoy your delicious skillet dish with rustic bread or over a bed of warm rice.

Feel free to swap chicken for turkey or tofu for a vegetarian version, and experiment with different vegetables if desired.
