- 2 lbs Pork Shoulder, cut into 1-inch cubes
- 4 Yukon Gold or Russet Potatoes, chopped
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 2 stalks Celery, diced
- 3 Carrots, sliced
- 2 Parsnips, sliced
- 4 cups Chicken or Vegetable Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Cinnamon
- 1/2 teaspoon Cloves
- 1/2 teaspoon Nutmeg
- 1 teaspoon Fresh Thyme (or 1/2 teaspoon dried)
- 1 teaspoon Fresh Rosemary (or 1/2 teaspoon dried)
- Salt and Pepper to taste
Instructions
- Prepare the Pork: Cut it into 1-inch cubes and season with salt and pepper.
- Sear the Pork: In a pot, heat olive oil over medium heat and sear pork until golden brown on all sides.
- Sauté Aromatics: Remove pork and cook onions, garlic, and celery until soft and fragrant.
- Add Spices: Sprinkle in cinnamon, cloves, and nutmeg and stir for about a minute.
- Incorporate Vegetables: Mix in carrots and potatoes, then return pork to the pot.
- Pour in Broth: Add broth and scrape the bottom of the pot to release flavorful bits.
- Season and Simmer: Add thyme, rosemary; bring to a boil, reduce heat, cover, and simmer for at least an hour.
- Finishing Touches: Taste and adjust seasoning before serving.
