A quick and delicious pasta dish featuring creamy ricotta and fresh spinach with a bright lemon flavor.
Ingredients

- 8 ounces pasta (spaghetti, fettuccine, or gluten-free)
- 1 cup ricotta cheese
- 2 cups fresh spinach
- 1 lemon (zest and juice)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Boil a pot of salted water for your pasta. Cook according to package instructions until al dente.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Toss in the fresh spinach, stirring until it wilts down, about 2 minutes.
- Reserve a cup of pasta water before draining the noodles.
- Add the drained pasta to the skillet with sautéed spinach and garlic, then stir in ricotta cheese along with lemon zest and juice. Adjust the creaminess with reserved pasta water as needed.
- Taste and season with salt and pepper. Add red pepper flakes for heat if desired.
- Serve hot, garnished with extra lemon zest or Parmesan.
Notes
Avoid overcooking the spinach to retain its vibrant color. Taste and adjust seasoning as needed.
